Zutaten
  

for the salad you need:

  • 200 G arugula
  • 2 avocado
  • 2 mango ripe
  • 200 G Mini mozzarella balls
  • 4 el Cashews*
  • 1 small Bunch of Thai basil

Preparations:

  • Sort the rocket salad, wash and drain or spin dry well. Cut off particularly thick and long stems (they are usually quite bitter).
  • Roast the cashew nuts in a pan without adding fat until golden brown. Set aside and let cool.
  • Peel the mangoes, cut the flesh from the pit and cut into slices or cubes.
  • Halve the avocado, deseed, peel off and also cut into slices or cubes.
  • Take the mozzarella balls out of the brine and let them drain in a colander.

Prepare the orange dressing:

  • Whisk together the orange juice, olive oil, white balsamic vinegar, Dijon mustard and maple syrup. Season with salt and pepper to your taste.

serving:

  • Arrange arugula on plates or a platter. Arrange mango and avocado pieces decoratively on top. Scatter over the mozzarella balls and cashews.
  • Pluck the leaves from the Thai basil and place on the salad.
  • Serve drizzled with dressing.
