Today we show you a vegan recipe for a hearty Irish stew with Guinness beer, which is traditionally made from beef or lamb. Our stew is not only vegan, but also very rich, easy to cook and very tasty. It consists of three different types of vegetables that you can easily find in your region. As a vegan meat alternative, today we use pulled beef likes made from wheat proteins for our Vegan Irish Stew with Guinness.
For a long time, Irish stews were considered hearty and sumptuous meals that mainly contained meat. There is now a vegan version of this popular dish that is just as delicious. The secret of the vegan Irish stew is a good amount of vegetables and a strong Guinness beer. Want to eat something healthy and tasty but not meat? Then vegan pulled beef is just right for you! Meat dishes from vegan alternatives
Traditionally, this meaty stew is cooked with beef or lamb. To replace the meaty part of this dish, we use a vegan seitan alternative. Jack fruit, mushrooms, vegan soy strips, or soy shreds also work because it has the right texture and can cook for a long time without falling apart.
The meat from vegan alternatives is not only a healthy, but also a tasty alternative to conventional meat. There is a wide range of dishes that can be prepared with vegan meat. Whether burgers, schnitzel or bratwurst – there is something for every taste. For example, you can prepare a delicious vegan schnitzel and if you like it a little heartier, you can also cook a vegan goulash. Simply put some oil in a pot and sweat the vegetables in it. Then the spices are added and the goulash is usually ready after just 30 minutes of cooking. Also saves a lot of energy.
The vegan meat alternatives consist of soy, tofu, seitan or other plant-based products. They taste delicious and can be used in many ways. Anyone who likes to eat meat will also be satisfied with vegan meat. Just try it. Do you love to stand in the kitchen and cook? Then you should definitely try Irish Guinness beer! The black beer gives every dish a very special touch and gives it a spicy taste. Especially in the cold season it is a wonderful alternative to conventional beers. Guinness is not only delicious, but also healthy! There are a few things to keep in mind when cooking with Guinness:
- Stew the vegetables at high temperature so that they can caramelize. Only then do you add the Guinness and deglaze everything. This way you get all the sweetness out of the caramelized veggies to balance out the bitterness of the beer.
- Don’t put too much Guinness in Irish stew. If possible, stick to the recipe for the best taste. Cook this dish with meat and it takes well over 2 hours, feel free to use more Guinness.
- Once you have all the ingredients in the pot, let it boil for half an hour to an hour. This is enough for the seitan and the vegetables are not completely overcooked during this time.
- If your vegan Irish stew with Guinness is still too bitter, add brown sugar. Teaspoonful until you like the taste.

Vegan Irish Stew with Guinness Beer
- 320 G Vegan meat substitute Seitan, soy strips, jackfruit ...
- 1 el vegetable oil or vegan butter
- 2 pc leek
- 1 Onion
- 2 clove of garlic
- 3 stem celery
- 3 carrots
- 1 el tomato paste*
- small bunch of thyme 4-5 stalks of it
- small Bunch of rosemary 1-2 sprigs of it
- 2 bay leaves
- 1 bottle Guinness beer 0.33l
- 1 L vegetable broth
- Brown sugar upon need
- kosher salt*
- Black pepper* from the mill
- food starch to tie
- Peel carrots and cut into pieces. (about 1 cm thick)
- Halve the leek lengthways and cut into strips (also 1 cm wide). Wash well and drain.
- Wash the celeriac, remove the threads and cut into 1 cm pieces.
- Peel onion and garlic and cut into cubes.
- Heat vegetable oil in a Dutch oven over medium-high heat.
- Add the onions and simmer until they start to colour. Remaining vegetables incl. Add garlic to saucepan and simmer, stirring constantly, until caramelized, about 5 to 6 minutes.
- Add the vegan meat substitute, stir and cook for a few minutes. I fry the vegan alternative briefly and vigorously in an extra pan. (but this is optional)
- Add the tomato paste and stir to combine all the ingredients. Let the tomato paste fry a little on the bottom of the pot. This not only ensures a smoky taste later, but also a perfect color of our Irish stew.
- Pour in the Guinness and fill up with the vegetable stock until everything is just covered. Bring to the boil and simmer gently for about 40 to 50 minutes. Stir occasionally.
- Season with salt, pepper and possibly sugar.
- Thicken with cornstarch mixed with cold water to desired consistency.
- Enjoy with fresh bread or mashed potatoes!
