Ingredients

  • Peel and roughly chop the onions and garlic.
  • Peel ginger and finely grate.
  • De-seed and finely chop the jalapenos.
  • In a large Dutch oven over medium-high heat, melt coconut oil (or ghee) and add the whole bay leaves, cumin, and fennel seeds and stir-fry until fragrant, 1 to 2 minutes.
  • Add onions and fry until golden brown. Reduce the heat as you do this, as you want to caramelize the onions to add a nice sweetness.
  • Add minced garlic, ginger and diced jalapenos. Fry for about 2-3 minutes.
  • Now add all the other spices. (Garam Masala, Ground Cumin, Coriander, Chili Powder, Fenugreek, Turmeric.
  • Stir once and stir in the canned tomatoes.
  • Add chickpeas and bring to a boil. If necessary, add a little water so that the chickpeas are completely covered. Cook covered on low heat for 10 minutes. With salt.
  • If it tastes bitter or has too much acidity in the tomatoes, add some sugar or agave syrup to balance it out.
  • Taste again and serve.

tip

If you like it spicier, stir in a teaspoon of garam masala. Stir in some coconut milk for more richness and creaminess.
