Fattoush salad with pita chips is more common in the Middle East. Really just a simple chopped lettuce in a refreshing lemon vinaigrette. Homemade pita chips serve as croutons at Fattoush!

What is Fattoush?

Besides tabbouleh, fattush is another popular Lebanese salad dish. Fattousch, however, is prepared with fried or fried thin flatbread, which is broken into pieces. Tips for making Fattoush

As with any fresh salad, Fattusch is the sum of its ingredients. Here are just a few tips:

  • Start by choosing the best produce, ripe tomatoes, freshly picked herbs, etc.
  • Omitting sumac would be a mistake because it is a special spice made from ground sumac berries and its tart flavor is very difficult to substitute
  • Use the best extra virgin olive oil you can find. The peppery, fruity taste is essential here.
  • Finally, remember that this is a basic fattoush recipe. If you like, try your own variations by adding seasonal vegetables and herbs. Try bringing in more herbs or garlic. And if you have pomegranate molasses, you can spice up the vinaigrette with 1 teaspoon.

Prepare Lemon Dressing:

  • Peel and finely chop or grate the garlic.
  • Whisk all the ingredients together vigorously in a small bowl (or shake well in a jar). Set aside for later.

Prepare the salad:

  • Wash all vegetables and drain well.
  • Cut romaine into strips or bite-sized pieces.
  • Cut the cucumber into thin slices.
  • Chop red onions, cut in half and thinly slice.
  • Also cut the radishes into thin slices.
  • Pluck the mint from the stems and roughly chop.
  • Halve the cherry tomatoes and quarter the large ones.
  • For the pita chips, cut the pita bread into bite-sized pieces. Mix it with a few dashes of olive oil, salt and pepper. Then bake in the oven at 200 °C for about 10 minutes until golden and crispy.
  • In a large bowl, combine the romaine, cucumber, red onion, tomatoes, radishes, mint and half the pita chips. Drizzle with the lemon dressing.
  • Serve the salad topped with the remaining pita chips, plus a sprinkling of sumac and freshly ground black pepper.
