Dukkah is originally an Egyptian spice combination for which there are of course no standard but many family recipe-based versions. The ingredients and recipes vary greatly, but almost all of them have some things in common. These are sesame, cumin and nuts. These three things definitely belong in authentic dukkah. Here is a small list of possible candidates that you can use as ingredients for dukkah. In our recipe, we limited ourselves to not that many ingredients and got great results.

Hazelnuts, almonds, sunflower seeds, pine nuts, pistachios, cashews, fennel seeds, coriander seeds, white and/or black sesame, cumin (cumin), black cumin, green peppercorns, sweet paprika, sea salt. Make sure, if you use the last 4 ingredients, they will NOT be roasted, but only added after roasting.

What can dukkah be used for?

This versatile spice is prepared in just a few minutes. It is fantastic for pimping aromatic soups , hearty salads or dips with it. But you can also just use it to sprinkle on top or, as is enjoyed by many, with coarse bread and olive oil. In fact, the ancient Egyptians loved it with hummus and plain bread. Dukkah is also completely vegan and has a long shelf life. Feel free to make larger batches and store in a tightly sealed jar. Then, when you feel like spicing up a dish, or avocado toast needs that extra something, pull your secret weapon out of the cupboard.

Ingredients
  

  • 60 G nuts Hazelnuts, walnuts, pistachios, cashews...
  • 30 G pine nuts*
  • 1 tsp cumin* cumin
  • 2 tsp Coriander* whole or ground
  • 2 el white sesame* or black sesame
  • 1 tsp Sea-salt*
  • 1/2 tsp pepper whole black
  • Dried herbs thyme, mint

optionally:

Instructions
 

  • Roast all the nuts together with the spices in a pan without adding fat.
  • Allow to cool and grind the mixture in a mortar.
