A heavenly salad made from avocado, blueberries and mint
For the salad:
- 4 bundle arugula or baby spinach, young kale, lettuce...
- 1 cucumber or 3 mini cucumbers
- 2 avocado
- 200 g blueberries
- 250 g blackberries
- 180 g feto* or feta
- 100 g hazelnuts
- 5 tbsp. native olive oil*
- 2 tbsp. lime juice
- 1 tbsp. maple syrup* or agave syrup
- 1 small bunch of mint
- kosher salt*
- Pepper* from the mill
- Wash and spin dry the arugula.
- Place berries in a colander and rinse gently.
- Wash the cucumber and cut into thin slices.
- Halve the avocado, deseed, peel off the skin and cut into slices.
- Roast the hazelnuts in a pan without fat until they develop a roasted aroma and the skin peels off. Allow to cool slightly and place in a clean kitchen towel and gently rub off the remaining skin.
For the mint dressing:
- Rinse the mint, reserve the prettiest leaves for serving and roughly chop the rest.
- Place all ingredients in a blender and mix well. Season to taste with salt, pepper and sweetness.
Arranging and serving:
- Spread arugula on plates. Scatter cucumber slices and avocado on top.
- Scatter berries on top and drizzle with some dressing.
- Now crumble the feto over it and add the nuts.
- Garnish with the remaining mint and serve.
